Last week a friend from church gave us a box full of lemons from her tree.  We’ve been enjoying a lot of lemon water this week, but I’ve finally reached that point where I really need to use about a bazillion lemons, and quick! This is where pinterest saves me every time!

I love lemon curd. It’s great in parfaits,  tarts, mini pies, etc. Or, just eat it plain; it’s a great treat all on its own!

I really like this idea! This is also a great way to save lemon juice for future use. After the ice cubes are frozen you can pop them out and put them in a freezer bag, then when something calls for a bit of lemon juice, just pull out an ice cube or two!

Another thing I like to freeze is pieces of lemon peel. I use these for crock pot meals, but mostly for my crockpot applesauce recipe, which uses a few strips of lemon peel. It’s a nice thing to have on hand in the freezer!
